Cashew butter, Of course! 🤎 Why are our nut butters different from those you find in organic stores?
The nut butter that we offer in our shop comes from a very precise artisanal manufacturing process, as the nuts are activated beforehand before being ground on the stone mill. This means that they are soaked in purified water for several hours, which removes enzyme inhibitors and activates their germination. The nuts are then rinsed and dehydrated at a low temperature (42°C) to ensure longer shelf life while preserving their nutrients. Finally, the nuts are ground on the stone mill, a natural process that preserves the vitality of the food and results in slightly grainy butter instead of completely smooth butter.
Compared to conventional almond butter or butter from other nuts that you find in stores, this activation process of the nuts results in butter with a significantly higher nutritional value. Additionally, the nuts processed and activated in this way are much easier to digest and their nutrients are better assimilated.

🤎 Which oilseeds are the most calorie-dense?
All oilseeds are quite high in calories because they are rich in healthy fats, especially unsaturated ones, which are a dense source of energy. These fats are far preferable to those found in animal products and by-products.
The calorie content varies depending on the oilseed. Here are the most calorie-dense oilseeds, based on the calorie content per 100 grams. It should be noted that these calorie calculations are based on the principle of the Lavoisier calorimeter (more info here) from 1793, which relies more on physical measurements and does not take into account human biology and cell interactions:
🔶 Macadamia: These nuts are the most calorie-dense of all, with about 718-720 calories per 100 grams. This is also why they go rancid so quickly, and it is preferable to buy them in shells, where a protective biological gas is present inside the shell. Once cracked, they should be consumed quickly.
🔶 Pecans: Pecans are the second richest, containing about 690 calories per 100 grams.
🔶 Cashews: Cashews contain about 553 calories per 100 grams.
🔶 Almonds: Almonds contain about 575 calories per 100 grams. We recommend soaking your almonds a few hours before consumption to release the phytic acid and better utilize their nutrients.
🔶 Walnuts (or common walnuts): Walnuts contain about 654 calories per 100 grams.
It is important to note that oilseeds are very nutritious and, when consumed in moderation, can be beneficial to health. They are rich in heart-healthy fats, proteins, fibers, and various vitamins and minerals.
