Fermented organic hazelnut spread

It was at a professional trade show in London where we met this Spanish SME. We were surprised by the idea and captivated by the multiple usage possibilities that this paste format offers. The organic fermented spreads can be used everywhere, in both sweet and savory dishes, to add a naturally rich touch of live cultures to everyday life.

Their very pronounced, slightly tangy taste instantly enhances your dishes with a truly unique note: on a salad, in any type of sauce, vegetable cream, soup, or in a smoothie, homemade ice cream, raw pastry, or mixed with your yogurt and muesli in the morning. For the more adventurous, they can also be spread on bread, a cracker, or a crepe.

The dough is NOT pasteurized: it thus retains the live cultures resulting from fermentation. The slightly acidic environment created by lacto-fermentation (about 48 hours) makes the proteins and fibers of the hazelnuts more digestible than a classic hazelnut puree.

Lacto-fermentation is an ancient culinary process that reveals and transforms the flavors of food. For about 48 hours, raw hazelnuts ferment under the action of live cultures (Lactobacillus, , Bifidobacterium, , Enterococcus), which gives the dough its unique character: a creamy texture, a pronounced taste, and a lively and slightly tangy note.

A dough naturally rich in live cultures : Unpasteurized, the paste retains the cultures from fermentation. It's much more indulgent to add a spoonful of fermented paste to one of your daily meals, to fully enjoy this living food.

Easier to digest than raw hazelnut : fermentation pre-digests a portion of the proteins thanks to the action of enzymes (amylase, protease, cellulase, lipase, pectinase) and softens the fibers. It also reduces the phytic acid content, a compound naturally present in nuts that limits the absorption of certain minerals like iron and zinc.

A unique, slightly tangy taste : Lacto-fermentation develops complex flavors that cannot be found in a simple hazelnut puree. This vibrant note enhances both savory preparations (salads, sauces, vegetable creams, soups) and sweet preparations (yogurts, smoothies, homemade ice creams, raw pastries).

The nutritional richness of the hazelnut preserved : the hazelnut is naturally rich in manganese, vitamin E, vitamins B1, B5, and B6, as well as copper, iron, and magnesium. Low-temperature fermentation, without pasteurization, preserves this natural nutritional composition.

A lipid profile similar to that of olive oil : The hazelnut is primarily composed of monounsaturated fatty acids (mainly in the form of oleic acid), with very few polyunsaturated and saturated fatty acids. A profile comparable to that of olive oil, a staple of the Mediterranean diet.
