ORGANIC PAPAYAS - 5 kilos

Origin: Southern Spain: GRANADA - IULIAN

Shipped directly from the grower: faster, fresher, less breakage in transit!

🌼 Papayas harvested at physiological maturity by our partner Iulian, located on the Spanish Costa Tropical.

To withstand transport, the fruits are delivered still firm and will be ready to eat a few days after receipt.

Sweet Sense variety.

Storage: at room temperature to speed up full ripening, otherwise 15 days minimum in the fridge. A mix of fridge and room temperature is ideal.

How do you know when a papaya is ready?
Look at the skin, then touch. A papaya is ripe when around 80% of its surface has taken on a golden hue and the large end gives slightly under finger pressure, without being soft. As long as it remains hard and mostly green, be patient: a few more days at room temperature, and the flesh becomes melting, sweet and fragrant.

In practical terms: take a few fruits out at room temperature to ripen, keep the others in the fridge, and rotate as you go. This is what allows you to spread the enjoyment of a 5 kg crate over several weeks without losing anything.

In the kitchen. The simplest remains the best: cut in half lengthways, seeds scooped out with a spoon, with a squeeze of lime. Ripe papaya also slips into a smoothie, an exotic fruit salad with mango and lime, or a raw sauce, like this papaya barbecue sauce for green cabbage wraps, blended with sun-dried tomatoes, garlic and jalapeño. And for som tam lovers, julienned green papaya works wonders in our raw mango cones with green papaya salad.

A word about the season. In Andalusia, papaya is generally grown under greenhouses on the Costa Tropical, with availability from around October to March. Sweet Sense is a variety with orange flesh, sweet and fragrant, which has little in common with a fruit picked green to withstand weeks on a ship.

🌼 Nutritional composition of papaya:

1) High in vitamin C

This is papaya's number one asset: around 61 mg of vitamin C per 100 g, i.e. 76% of the reference intakes. A nice 200 g slice therefore easily covers your needs for the day. Vitamin C contributes to the normal function of the immune system, to the protection of cells from oxidative stress, and to the reduction of tiredness and fatigue.

2) Source of folate (vitamin B9)

With 37 µg per 100 g, i.e. 19% of the reference intakes, papaya is a source of folate. Folate contributes to normal psychological function, to the reduction of tiredness and fatigue and to maternal tissue growth during pregnancy.

3) Papain, a very particular enzyme

This enzyme was discovered in papaya (as its name suggests!). Its particularity: it cuts proteins into smaller fragments. That is why, in tropical countries, meat is traditionally wrapped in papaya leaves to tenderise it. In reality, papain is mainly concentrated in the latex of the green fruit; ripe papaya contains less.

4) Carotenoids: lycopene, lutein, zeaxanthin

It is lycopene that gives the flesh its beautiful orange-red colour, and it is more abundant in very ripe papayas. Let us be honest: to date, no health claim is authorised in Europe for lycopene, lutein or zeaxanthin. What we can say is that papaya contains them.

5) Vitamin C, collagen and skin

Vitamin C contributes to normal collagen formation for the normal function of skin, blood vessels, bones and cartilage. That is what is established, with no miracle promise about your complexion.

6) A fruit at 43 kcal per 100 g

43 kcal, around 88 g of water and 1.7 g of fibre per 100 g (see the table in the "Practical info" tab). Frankly, as a refreshing snack, papaya easily finds its place.

Good to know: the black seeds are edible!

A varied and balanced diet and a healthy lifestyle are important. The beneficial effects mentioned above are obtained with a consumption of around 100 to 200 g of papaya, as part of a balanced diet.

Frequently asked questions

How do you know if a papaya is ripe and ready to eat?

A papaya is ripe when around 80% of its skin has turned golden and its large end gives slightly under finger pressure. As long as it remains hard and mostly green, leave it at room temperature for a few more days: the flesh will become melting, sweet and fragrant.

My papayas arrive firm, is that normal?

Yes, that is intentional. Iulian's organic papayas are harvested at physiological maturity, then shipped still firm to withstand transport from Malaga. They finish ripening at your home and are ready to enjoy a few days after receipt.

How do you store a 5 kg crate of papayas without losing any?

The ideal is to mix: a few papayas at room temperature to ripen them, the others in the refrigerator, where they keep for at least 15 days. You then take them out as you go, which spreads the enjoyment over several weeks.

Can papaya be frozen?

Yes, it is a good way to use up a surplus. Cut the ripe flesh into cubes, without the skin or seeds, spread them on a tray, freeze, then transfer to a bag. The thawed texture is softer: keep it for smoothies and instant sorbets rather than for eating in slices.

Can you eat the black seeds of the papaya?

Yes, the black seeds of the papaya are edible. Most people remove them with a spoon before enjoying the flesh, but you can also sprinkle a few over a salad for their peppery flavour.

What is the difference between green papaya and ripe papaya?

Green papaya is picked before ripeness and is eaten grated in a salad, like som tam from South-East Asia, or cooked as a vegetable. It contains a latex (papain) and is traditionally not recommended for pregnant women. Ripe papaya, like those in this crate, is sweet and melting and is enjoyed as a fruit.

What does a portion of papaya give me nutritionally?

A 100 g portion of papaya provides around 43 kcal and 61 mg of vitamin C, i.e. three quarters of the reference intakes. Vitamin C contributes to the reduction of tiredness and fatigue and to the protection of cells from oxidative stress, as part of a varied and balanced diet and a healthy lifestyle.
