Raw fudgy cacao and prune cookies

Here is a dense, melt-in-the-mouth and seriously chocolatey cookie, ready in a quarter of an hour without an oven. The soft prunes bind everything together and bring a natural sweetness, while homemade pumpkin seed flour replaces ordinary flour. An express dessert for chocolate cravings, even better after a spell in the fridge.

Ingredients

  • 200 g soft prunes, pitted
  • 60 g raw cacao powder
  • 2 tablespoons virgin coconut oil
  • 150 g pumpkin seeds (to be ground into flour)
  • 2.5 tablespoons honey
  • 1/4 teaspoon vanilla
  • 2 small pinches of Himalayan salt (or the equivalent of 1 tablespoon - 15 ml - of seawater)

Method

  1. Grind the pumpkin seeds into a fine flour in a coffee grinder or blender, then tip it into a mixing bowl.
  2. Add the cacao, vanilla and salt, and stir.
  3. Blend the prunes in the food processor until you get a smooth paste.
  4. Add the prune paste, coconut oil and honey to the dry ingredients, then knead by hand until it forms a ball.
  5. Shape into small balls, flatten them into rounds and mark them with a fork.
  6. Enjoy straight away or place in the fridge for firmer cookies.

Tip

These cookies are more like fudge than a crunchy biscuit: that is intentional. If the dough sticks too much to your hands, put it in the fridge for 10 minutes before shaping the rounds.

FAQ: your questions about raw cacao cookies

What can replace flour in cookies?

Nut and seed powders make very good substitutes: ground almonds, ground hazelnuts or, as here, pumpkin seed flour. The latter takes just a few seconds to make in a coffee grinder or blender with 150 g of seeds, pulsing so that you do not end up with a butter. Without baking, it is the prune paste, coconut oil and honey that hold everything together.

Can you eat raw cookie dough?

Classic cookie dough is not recommended raw, as it contains raw eggs and wheat flour, which is not meant to be eaten uncooked. Edible cookie dough recipes therefore leave out the egg and use heat-treated flour. These cookies are designed to be eaten as they are: prunes, raw cacao, pumpkin seed flour, coconut oil and honey, with no egg and no grain flour.

What dessert can you make with prunes?

Far Breton, a prune flan from Brittany, remains the great classic, alongside tarts, clafoutis and moist prune cakes. Without baking, prunes become an excellent binder: blended into a paste, they replace caramel in bites, truffles or these melt-in-the-mouth cacao cookies. Choose them nice and soft, or soak them for a few minutes in lukewarm filtered water if they are dry.
