The full range Cacao

Biovie raw cacao comes from Ecuador, Nacional variety, bought directly from a cooperative under the SPP label (Symbol of Peasant Producers), with partner Rrraw Cacao Factory. Unlike conventional cacao, it is never roasted: the beans ferment, then dry in the sun at under 42 °C, which preserves its nutrients better than high-temperature roasting. It comes as whole beans, cacao nibs, powder or melting paste. To get started, try the nibs, which are easy to add to a yogurt or smoothie without any preparation., 11 products

FAQ: your questions about carob and dates

How do you use carob powder?

Like cocoa, with one difference: it is naturally sweet, so reduce the sweetener in the original recipe. It is stirred in cold into a plant milk, porridge, compote or a preparation like this pudding, at one to two tablespoons. In baking, it replaces cocoa weight for weight, with a milder, more caramel result. A practical point: it clumps easily, so sift it or blend it with the liquid rather than stirring it in with a spoon.

What are the health effects of carob?

The best established point is its fibre content, which contributes to normal bowel function - the pods contain more than 30%. The rest calls for caution: a lot is written about its effect on blood sugar or cholesterol, often extrapolated from small studies, sometimes run with concentrated extracts that have nothing to do with a spoonful of powder in a dessert. What can be said without exaggeration is that it contains neither caffeine nor theobromine, which makes it an alternative to cocoa in the evening or for children.

What is the best time to eat dates?

There is no universal answer, but a few landmarks hold up. Rich in fast sugars and fibre, dates are particularly suited to before or after physical effort, when energy is quickly mobilised. As an afternoon snack, two or three dates with a handful of almonds last longer than a biscuit. On an empty stomach and on their own, however, they cause a spike followed by a dip in some people; pair them with a fat or a protein, as the avocado does in this pudding.
