Ingredients
For the base
- 80 g desiccated coconut (ground to a fine powder)
- 40 g desiccated coconut (left as it is)
- 2 tablespoons virgin coconut oil
- 30 ml water
- 25 g lucuma powder
- 1 pinch of pink Himalayan salt (or the equivalent of 1 tablespoon - 15 ml - of seawater)
- 2 pinches of ground cardamom
- 1/4 teaspoon real vanilla
- 1 teaspoon organic lemon juice
- 1/2 teaspoon organic lemon zest
- 3 teaspoons honey
For the chocolate sauce
- 120 ml melted virgin coconut oil
- 3 tablespoons raw cacao powder
- 1 tablespoon purple corn powder
- 2 tablespoons lucuma powder
- 1 pinch of pink Himalayan salt
- 1/2 teaspoon sunflower lecithin
- 3 tablespoons liquid honey
- A few drops of peppermint essence or orange juice
For the topping (your choice)
- Goji berries, yellow kiwis, blood oranges, kumquats or any other seasonal fruit
Method
- Grind the first portion of desiccated coconut to a fine powder using a blender or a coffee grinder.
- In a bowl, mix all the dry base ingredients by hand.
- Transfer to a food processor, add the remaining base ingredients and blend until you get an even dough.
- Work the dough by hand then spread it on a plate to form a round pizza base.
- Melt the coconut oil for the sauce over a gentle water bath, then whisk in the sunflower lecithin by hand until fully incorporated.
- Add the rest of the sauce ingredients and whisk until creamy and glossy.
- Pour the sauce over the pizza base and decorate generously with the fresh fruit of your choice.
Tip
Without purple corn, simply replace it with a little more cacao: the colour will be less purple but the taste stays just as good. Work in a cool room: coconut oil sets at around 24 °C, which leaves you little time between pouring the sauce and decorating. Put the pizza in the fridge for 10 minutes before adding the fruit, so the sauce holds them without running.
