Ingredients
- 480 ml almond milk (homemade for a raw version) or another plant-based drink
- 100 g chia seeds
- 1/2 teaspoon vanilla
- 1 teaspoon probiotic powder
To serve
- fresh seasonal fruit (berries, peach, kiwi, mango...)
- a drizzle of honey (optional)
Method
- In a mixing bowl, whisk together the almond milk, chia seeds, vanilla and probiotic powder.
- Leave to rest for 10 minutes, then whisk again so the seeds do not clump together at the bottom.
- Cover and place in the fridge for at least 4 hours, ideally overnight. Whisk once or twice more during the first hour for a nice even texture.
- When ready to serve, divide between bowls or jars, top with fresh fruit and add a drizzle of honey if you like.
Tip
Probiotic powder does not cope well with heat: use cold or room-temperature almond milk, never warmed. To turn this into a dessert rather than a breakfast, add the honey during preparation and layer the pudding and fruit in small glasses.

Why won't my chia pudding set?
Most of the time, it simply needs more resting time or a second whisk: the seeds sink to the bottom, clump together and the milk stays liquid on top. Whisk 10 minutes after mixing, then once or twice during the first hour, and leave it in the fridge for at least 4 hours. With 100 g of seeds to 480 ml of milk, the texture should coat a spoon; if it is still too runny, add a tablespoon of seeds and wait about twenty minutes.
Is it good to eat chia seeds in the morning?
Morning is a convenient time for chia seeds, as they can be prepared the night before and give you a breakfast that is ready in no time. They provide fibre and omega-3 fatty acids, and their gel-like texture keeps you going until lunch. Preferably eat them already soaked, as in this pudding, in reasonable amounts, and drink enough throughout the day.
How do you eat chia seeds with milk?
The simplest way is precisely a pudding: mix the seeds into the milk, whisk twice, then leave to set in the fridge for several hours. You can also add a spoonful to a smoothie or sprinkle some over porridge. As for the milk, a neutral plant-based drink such as almond milk lets the vanilla and fruit shine; coconut milk will give a richer, creamier pudding.
How can I make probiotics at home?
You cannot make probiotic powder at home, but you can prepare fermented foods that contain live cultures: water kefir, lacto-fermented vegetables, fermented plant-based yoghurt. For this recipe, for example, you can replace about 60 ml of the almond milk with a nice fizzy water kefir. Always add these cultures cold, as heat destroys them.
