A ripe mango and a ripe avocado bring almost exactly the same creaminess, and that's what explains the texture of this salsa: it stays soft, almost spoonable, where a tomato-based salsa would stay distinctly chunky. Lime juice is the only acidic element in the bowl, but it's enough to cut through all that richness and keep the mixture from turning flat and one-note. Finely sliced spring onion adds a sharp, faintly sulphurous note that plays well against the fruit's sweetness, while parsley, set alongside the more expected coriander, gives depth to the herbal register instead of leaving everything to coriander alone. Everything is mixed by hand in a bowl, no blender and no cooking involved: the prep time comes down to however long it takes to dice the mango and avocado and slice the spring onion. Since the ingredient list is so short, fruit ripeness matters here more than in most recipes: an unripe mango or a too-firm avocado will rob the salsa of the softness that makes it worthwhile.
