Ingredients

  • 1 young coconut (water and flesh)
  • 1 banana
  • 1 tablespoon maca powder
  • 30 g quinoa flakes
  • honey and raw cacao nibs, to garnish (optional)

Method

  1. Open the coconut and strain the water to remove any pieces of shell.
  2. Clean the coconut flesh of any remaining husk.
  3. Blend the coconut water and flesh with the rest of the ingredients.
  4. Serve immediately.

Tip

Use a young coconut that is very fresh and cold: this is what gives the best texture and flavour. If your coconut yields little water, top it up with a splash of plant milk rather than ice, which would dilute the taste. The quinoa flakes can be blended in from the start for a perfectly smooth drink, or added just before serving if you like a bit of crunch.
