Ingredients
- 375 ml unsweetened almond milk (or another plant milk)
- 95 g raw oat flakes
- 1 tablespoon chia seeds
- 1 small grated carrot
- 1 small handful of raisins
- 1 large sweet apple, diced or thinly sliced
- Ground cinnamon, to your taste
- Salt, to your taste (or the equivalent of 1 tablespoon - 15 ml - of seawater)
- Optional: a pinch of powdered raw ginger, of powdered raw turmeric and of black pepper
- To serve: plant yoghurt, crushed nuts or seeds, granola
Method
- Divide the oat flakes and the chia seeds between two bowls or two jars.
- Add the cinnamon and the salt to your taste, then mix well with a spoon. If you like, also add a little ginger, turmeric and black pepper.
- Stir in the grated carrot, the raisins and the apple, then pour the almond milk over the top.
- Cover and put in the fridge overnight.
- In the morning, add your toppings just before eating, plant yoghurt, crushed nuts or granola, so that they keep all their crunch.
Tip
This porridge keeps for at least 3 days in the fridge in an airtight container: prepare several jars in advance and you are sorted for the start of the week. If the texture seems too thick when you wake up, loosen it with two tablespoons of plant milk. And if you like contrasts, keep half the apple aside to cut it at the last moment.

What is a simple recipe for overnight oats?
The base comes down to two things: raw oat flakes and a liquid, in a ratio of roughly 1 part oats to 2 parts plant milk. Here, 95 g of oats and 375 ml of almond milk are enough for two bowls.
