The fermented birch sap is a traditional plant-based drink with a slightly tangy taste, harvested every spring in birch forests. The one we offer is Probiosève®, harvested at 900 meters altitude on the Plateau de Sault, in the heart of the Cathar Pyrenees, by the small team of La Sève Cathare. 3 L bag-in-box, organic, unpasteurized, without preservatives.

Birch sap has been used since ancient times. Forgotten for a few decades, it is now returning to our spring habits. This seasonal drink is harvested from February to April, at the beginning of spring, when the sap rises in the tree to awaken the buds. As a nutritive liquid, it circulates through the birch's vessels, carrying water and minerals from the soil to the branches, providing the energy needed for the creation of new leaves and flowers.

Harvested respectfully from wild Pyrenean trees, the sap is then preserved as is for several months until stabilization. The naturally present sugars then initiate a non-alcoholic fermentation, giving the birch sap its characteristic slightly tangy taste. This process allows the sap to be preserved for several years without any additives, thermal transformation, or cold chain.

🌳 Why choose fermented sap over fresh sap?

Lactofermentation is one of the oldest known preservation methods. It preserves the naturally present compounds in fresh sap - minerals, organic acids, trace elements - without resorting to pasteurization. 🌳 A drink rooted in European tradition

Birch sap has accompanied the inhabitants of Northern Europe, the Baltic countries, Central Europe, and French forest regions for centuries. Its harvest, limited to the short spring window from February to April depending on altitude, makes it a rare and seasonal drink in European food heritage. Frankly, when observing the peoples who have integrated this practice for generations - Finns, Latvians, Russians, Carpathian inhabitants - one realizes how ancient and rooted this ritual is.

During the natural fermentation of fresh sap, plant sugars are transformed by naturally present lactic ferments. The small team of La Sève Cathare began harvesting birch sap in 2011 on the Plateau de Sault at 900 m altitude in preserved wild Pyrenean forests, free from chemical or electromagnetic pollution.
The trees are consulted and thanked during the harvest for their generosity and sharing of their precious nectar. La Sève Cathare works with respect and kindness towards the trees to offer a high-quality product.
