ORGANIC FERMENTED BIRCH SAP 3L - PLAIN
Origin: Plateau de Sault, Cathar Pyrenees (Occitanie)
The fermented birch sap is a traditional plant-based drink with a slightly tangy taste, collected every spring in birch forests. The one we offer is Probiosève®, collected at an altitude of 900 metres on the Plateau de Sault, in the very heart of the Cathar Pyrenees, by the small team at La Sève Cathare. 3 L bag-in-box, organic, unpasteurised, no preservatives.
Birch sap has been used since ancient times. Forgotten for a few decades, it is now returning to our springtime habits. This seasonal drink is collected from February to April, in early spring, when the sap rises in the tree to wake the buds. A nutrient liquid, it circulates through the birch's vessels and carries water and minerals from the soil to the branches, to provide the energy needed to create new leaves and flowers.
Collected with respect from wild Pyrenean trees, the sap is then kept as it is for several months until it stabilises. The naturally occurring sugars then initiate a fermentation - non-alcoholic - which gives birch sap its characteristic slightly tangy taste. In practical terms, this process allows the sap to be kept for several years without any additions, without heat treatment, and without a cold chain.
🌳 Why a fermented sap rather than fresh?
Lacto-fermentation is one of the oldest known methods of preservation. It preserves the compounds naturally present in fresh sap - minerals, organic acids, trace elements - without resorting to pasteurisation. Probiosève® remains a living product, naturally stable at room temperature (no need to refrigerate it), with no preservatives and no additives.
🌳 When and how to enjoy it?
The lacto-fermented birch sap is traditionally part of the rituals of the changing season, as a spring drink - a moment found in many forest cultures, from Northern Europe to Scandinavia. With Aurélie, we include it every year when spring returns, as a little rendezvous with the season that is opening.
Serving suggestion: a small glass of around 15 cL in the morning, preferably on an empty stomach, during the spring period. The 3 L bag-in-box format allows around 20 servings of 15 cL for one person. For a detailed overview of the traditional uses of sap, see our complete guide to birch sap.

🌳 A drink rooted in European tradition
Birch sap has accompanied the inhabitants of Northern Europe, the Baltic countries, Central Europe and the forest regions of France for centuries. Its harvest, limited to the short spring window from February to April depending on altitude, makes it a rare and seasonal drink in the European food heritage. Frankly, when you look at the peoples who have practised this for generations - Finns, Latvians, Russians, inhabitants of the Carpathians - you realise how ancient and deeply rooted this ritual is.
🌳 Lacto-fermentation, an ancestral process
During the natural fermentation of fresh sap, the plant sugars are transformed by the naturally present lactic ferments. It is this process that gives fermented birch sap its slightly tangy taste and allows it to be kept at room temperature, without pasteurisation or additives. The lactic acid naturally produced during this fermentation is the same as that found in sauerkraut, kefir or lacto-fermented vegetables - a family of living foods that we have championed at Biovie since 2007.
🌳 A composition that comes from the tree and its soil
Birch sap is naturally made up of plant water, simple sugars, organic acids and minerals from the soil into which the tree sinks its roots. The Plateau de Sault, at an altitude of 900 m in the Cathar Pyrenees, offers a preserved terroir, far from the large agricultural plains and industrial pollution. It is a detail which, for us, makes all the difference: the quality of a sap depends directly on the quality of the soil and the environment in which the tree grows.
La Sève Cathare: PROBIOSEVE®
The small team at La Sève Cathare began collecting birch sap in 2011 on the Plateau de Sault at an altitude of 900 m in wild Pyrenean forests preserved from chemical or electromagnetic pollution.
The trees are consulted and thanked during the harvest for their generosity and for sharing their precious nectar. La Sève Cathare works with respect and kindness towards the trees to offer a product of great quality.
