Jackfruit - the fruit of the jack tree - is the largest fruit in the world to grow on a tree (up to 40 kg!), with an astonishing taste, between banana and mango. Freeze-dried, its water is removed cold (the fresh fruit contains nearly 75%) without ever heating it: what remains is the concentrated, crunchy flesh, with no added sugar. We are pleased to offer you jackfruit (= the fruit of the jack tree) harvested at maturity in Vietnam, and freeze-dried in small pieces in a resealable 200g bag.

Jackfruit is the largest fruit in the world (from a fruit tree); its rind is covered in small spikes and it can reach up to 40kg. It belongs to the same family as mulberry trees: the Moraceae. Its white to yellow flesh is eaten as a fruit, raw or cooked, while its large seeds are roasted or boiled (like chestnuts). When it is still young, its flesh is also used as a meat replacement in savoury dishes.
Still little known in France, it is starting to appear in vegetarian/vegan restaurants, mainly to imitate "pulled pork" or chicken breast.
Its rather unique taste is a blend of banana and mango.

The fruits are grown in a climate suited to their growth (exotic fruits) and above all, they are picked at full maturity just before being freeze-dried. That is the guarantee of a quality product. Our supplier is not organic-certified, but the growing is organic and the fruits are certified "pesticide residue-free".

This technique, which appeared in France at the beginning of the 20th century, dries food by sublimation: the product is first deep-frozen, before its water is evaporated under vacuum. In this way, the water passes directly from a solid to a gaseous state without passing through the liquid state! Because no heat is involved, freeze-drying preserves the volume, appearance and most of the nutrients of the food.

How do you eat freeze-dried jackfruit?

You can crunch it as is as a snack, add it to a muesli, a granola or a fruit salad, blend it into a smoothie, or slip it into your recipes and home-made kefir or kombucha drinks. As its taste is concentrated, a small quantity is enough. Rehydrated for a few minutes, it regains a softer texture.

How do you store a bag of freeze-dried jackfruit?

Keep the bag at room temperature, away from light and heat. The 200 g format is resealable: remember to reseal it well after opening to preserve the crunch, as freeze-dried fruit easily takes up moisture from the air.
