🌿 Kombu is the base ingredient of a traditional Japanese broth called "dashi." This seaweed alkalizes meals in general. When used in the preparation of tomato sauce, it neutralizes the acidity.

🌿 Kombu seaweed is considered in the East as the medicinal seaweed, a seaweed of health and longevity, and it means "happiness" in Japanese.
This queen of the seas lives in a true forest. Brown in color, it can reach up to 6 meters long.

For its countless properties, kombu seaweed has been sought after since ancient times, particularly for its richness in iodine. Kombu contains 20 to 30% mineral salts, which is 8 times more calcium than milk, 5 times more iron than spinach, and is also very rich in potassium and sodium. It contains vitamins A, B1, B2, niacin, B6, B12, C, E, F, K, and PP. It also contains nearly 10% protein and 60% carbohydrates: guaranteed energy!
This algae is also known for its Chelating properties of heavy metals. Kombu has an interesting property, which is to accelerate the cooking of grains and legumes, also making them more digestible. It contains sodium glutamate, which is a natural flavor enhancer.
