Fresh organic Royal Kombu seaweed, in 1kg or 500g packs

(Saccharina Latissima)

The power and freshness of the sea on your plate! Discover the iodised, sweet taste of kombu seaweed!

Preserved in sea salt, our fresh kombu seaweed (variety Saccharina Latissima) keeps for 6 months in the fridge. We recommend eating it after two or three desalting soaks.

🌿 Kombu seaweed can also be used to make a stock. Simply bring water to the boil with pieces of fresh kombu, herbs and vegetables. Leave to infuse for 5 to 10 minutes with the heat off, then remove the kombu strips. This stock can be enjoyed plain with vegetables, goes perfectly in soups, or replaces the cooking water for grains and pulses.

Kombu is in fact the base ingredient of a traditional Japanese stock called "dashi". Used when making tomato sauce, it neutralises its acidity.

The widest kombu blades can be used to wrap other ingredients and served as parcels or little pouches.

🌿 The word kombu means "happiness" in Japanese.

This queen of the seas grows in veritable forests. Brown in colour, it can reach 6 metres in length.

The detailed nutritional composition of kombu is given in the nutritional data sheet from the Centre d'Étude et de Valorisation des Algues (CEVA) below.

Kombu has an interesting property: it speeds up the cooking of grains and pulses. It contains sodium glutamate, a natural flavour enhancer.

Hand-harvested on the foreshore – March to June

- Storage : in the fridge

- Delivery : Seaweed is shipped on a just-in-time basis, so a few extra days are sometimes needed to process your order, depending on the day we are restocked. Seaweed easily withstands several days in transit without refrigeration, even in hot weather, thanks to its salt-bath packaging.

You receive an e-mail on the day your parcel leaves, then your tracking number the following day.

Seaweed sometimes releases a little water during transport, despite double zip packaging. This is rare, but if your box arrives damp, it is not a problem: please accept your parcel and contact us by e-mail so we can sort it out. In 10 years we have always found an amicable solution, but refusing fresh goods means the goods are lost, and we would like to avoid that situation.
