Discovery Set: 4 Organic Raw Cacao Tablets by Songes et Cacao

This set brings together the four raw cacao tablets we have selected from Songes et Cacao, the bean-to-bar workshop of Yann Maritaud. Two indulgent and two spicy dark chocolates, to discover the full range of unroasted cacao, from the mildest to the most surprising. The set is cheaper than buying the four tablets separately.

🍫 The 4 Tablets in the Set

- Gianduja Hazelnuts & Almonds: the most indulgent, like a spread in tablet form, without milk or palm oil.

- Chestnut & Cacao Nibs: the vegan equivalent of milk chocolate, with AOP chestnut flour from Ardèche and the crunch of cacao nibs.

- Dark 75% Timut Pepper: an intense dark chocolate ending with fresh grapefruit notes.

- Dark 75% Salt & Turmeric: the bold contrast of salty and mild spice.

🍫 How to Taste?

Start with the mildest and finish with the most intense: Chestnut, Gianduja, then Salt & Turmeric, and finally Timut. Let each square melt without biting, and drink some water between tablets to reset your palate.

It's also a great gift idea to introduce raw cacao to a chocolate lover, or to those who think they don't like dark chocolate.

Raw Cacao, Four Ways

The four tablets share the same starting point: organic cacao beans unroasted, ground for 24 hours under a stone mill. Without high-temperature cooking, the cacao retains a much higher proportion of its polyphenols and flavonoids, as well as its most delicate aromas. To learn more, read our article on the benefits and virtues of raw cacao.

All are vegan, sweetened with a blend of coconut flower sugar and French beet sugar, and handmade from bean to tablet. They remain indulgences: to be savored square by square, as part of a varied and balanced diet.

SONGES ET CACAO

SONGES ET CACAO

Songes et Cacao is the workshop of Yann Maritaud, a chocolatier based in Drôme, in Crest, after several years in Lamastre in Ardèche. Yann is among the very few French chocolatiers who make their chocolate from scratch, from bean to bar: this is the "bean-to-bar" approach. Only 2 to 3% of chocolatiers in France work this way.

At his workshop, everything that can be done by hand is done by hand. The beans are sorted one by one, crushed, and separated from their shells, then ground for 24 hours under a stone mill to obtain the cacao paste. Each tablet is then hand-molded and wrapped. No step is outsourced to an industrial company.

Importantly, the beans are not roasted. While classic chocolate roasts its beans between 150 and 180 °C, Yann works with them raw, preserving the most delicate aromas of each origin, much like a grape variety for wine.

His tablets are certified Organic Agriculture and Nature & Progrès. The beans come from small cooperatives in South America, the chestnut flour from La Ferme du Châtaignier in Lamastre, and the sugar is a blend of coconut flower sugar and French beet sugar. The tablet packaging is compostable, and the workshop waste is used as mulch by a neighboring plant producer.

We discovered Yann's work while searching for a raw cacao workshop, and we immediately recognized the same level of commitment as at Biovie. After a family tasting, the choice of these four tablets was clear.

Frequently Asked Questions about the Discovery Set
:

What does the discovery set contain?

Four 50 g tablets, one of each: Gianduja Hazelnuts and Almonds, Chestnut and Cacao Nibs, Dark 75% Timut Pepper, and Dark 75% Salt and Turmeric.

Does the set contain allergens?

Yes: the Gianduja tablet contains hazelnuts and almonds, and the Chestnut may contain traces of gluten. All tablets may contain traces of tree nuts. Therefore, the set is not suitable for people allergic to tree nuts or those with celiac disease.

Why does my tablet have white marks?

This is blooming: after a heat shock (during transport, for example), the cocoa butter rises to the surface and forms a white film. It's purely aesthetic, the tablet remains perfectly consumable, and its taste is intact. To avoid it, store it in a cool, dry place, between 15 and 18 °C, away from light.

Why do we say "raw cacao" instead of "raw chocolate"?

The term "raw chocolate" is not recognized by French regulations. Therefore, we refer to raw cacao tablets: the beans are not roasted, unlike classic chocolate whose beans are roasted between 150 and 180 °C. This preserves the delicate aromas of the bean.
