The technique of freeze-drying, which appeared in France at the beginning of the 20th century, dries food through sublimation: the product is first frozen, then its water is evaporated under vacuum. Thus, the water goes directly from a solid to a gaseous state without passing through the liquid state! Because there is no heat involved, Freeze-drying preserves the volume, appearance, and essential nutrients of the food.

1. Natural pigments: betalains
The red-fleshed pitaya gets its magenta color from natural pigments called betalains. These compounds are being researched, but let's be cautious: to date, no health claims have been validated for them. What we can say is that they are at the heart of the fruit's natural profile - and its incomparable look in a bowl.
2. One of the least sweet in the range
Here is a point that I really like: with 30 g of sugars per 100 g, freeze-dried pitaya is about twice as discreet in sugar as our freeze-dried lychee (60 g). It remains a concentrated fruit, so indulgent - but it is one of the most modest in sugar among our freeze-dried fruits.
3. Crunchy fibers and seeds
The pitaya is one of the few fruits whose seeds are also eaten: these small black dots add crunch and fiber. Like any fruit, it contributes to the variety of your diet - and freeze-drying does not remove these fibers, it only removes the water.
4. A snack without added sugar or additives
No added sugar, no additives, no coloring: this color is 100% the fruit. Personally, it's the piece I put on porridge when I want it to visually pop at breakfast - and for the kids to forgo industrial candies.

No. Our freeze-dried pitayas are made of 100% pitaya, with no added sugar, no additives, and no coloring. The 30 g of sugars per 100 g are solely the natural sugars of the fruit, concentrated by the removal of water. In fact, it is one of the fruits with the least sugar in our freeze-dried range.
You can snack on it as is, sprinkle it on a plant-based yogurt, a bowl, porridge, or granola, add it to a smoothie, or let it infuse in kefir water or homemade kombucha. Rehydrated for a few minutes, it regains a softer texture. A small handful is enough, as its taste and color are concentrated.
This magenta color comes from betalains, pigments naturally present in the red flesh of the dragon fruit. Since freeze-drying removes water at low temperatures, without cooking, it preserves the original color of the fruit. No coloring is added: the hue you see is 100% pitaya.
