The technique of freeze-drying, which appeared in France at the beginning of the 20th century, dries food through sublimation: the product is first frozen, then its water is evaporated under vacuum. Thus, the water goes directly from a solid to a gaseous state without passing through the liquid state! The intensely sweet taste comes solely from the naturally occurring sugars in the fruit, concentrated by the removal of water.
