Freeze-dried strawberry

Freeze-dried strawberry is pure, concentrated strawberry: its water is removed cold (the fresh fruit contains almost 90%) without ever heating it, and what remains is a crunchy piece, with intense colour and fragrance, no added sugar. In practical terms, as the strawberry is full of water, the freeze-dried version concentrates the taste enormously - a small handful, and the whole strawberry is there. To crunch as it is, on a granola or in a bowl. Our whole range of freeze-dried fruits is this way.

We are pleased to offer you freeze-dried strawberries in small pieces in a resealable 200g pouch, which were first harvested at maturity in Vietnam, to guarantee optimal fragrance and intense colour.

After the success of our other freeze-dried fruits, we wanted to offer you other varieties of tropical fruits. We were won over by the intense fruit flavour this partner offers us; they are the best we have tasted so far! A real sweet with a concentrated fruit taste.

The fruits are grown in a climate suited to their growth (exotic fruits) and above all, they are picked at full maturity just before being freeze-dried. That is the guarantee of a quality product. Our supplier is not certified organic but the farming is, and the fruits are certified "pesticide residue-free". Freeze-dried, the strawberries retain their natural flavour, with no added sugar or artificial flavourings.

Discover the unique taste of strawberries in a crunchy version! A delicious alternative to sweets for children - and for grown-ups too.

Crush them into a powder, for example, to naturally colour and flavour an icing or a plant-based yoghurt - zero additives, just strawberry. To compare our varieties, see our complete guide to freeze-dried fruits.

The freeze-drying technique, which appeared in France at the beginning of the 20th century, dries foods by sublimation: the product is first deep-frozen, before its water is evaporated under vacuum. In this way, the water passes directly from a solid to a gaseous state without going through the liquid state! Because there is no heat involved, freeze-drying retains the volume and appearance of the food.

❄️ How do you eat freeze-dried strawberries?

As their taste is particularly concentrated, you can add them in small quantities to your plant-based recipes. They will also add intense, fruity aromas to your homemade kefir and kombucha drinks ! You can also enjoy them as they are as a snack, or add them to mueslis, granolas or fruit salads. They are also perfect to add to smoothies for an exotic note, or as an infusion after rehydration for a mild, fruity taste. ❄️ Also find in this video the principles of freeze-drying explained by Miguel Barthelery:

In practical terms, what does the strawberry really provide? Here is what its composition allows us to state, strictly within the framework of European regulations.

Anthocyanins, naturally

The beautiful red colour of the strawberry comes from natural pigments, anthocyanins, from the polyphenol family. These compounds are the subject of research, but let us be honest: no health claim has been validated for them to date. They are simply part of the natural profile of the fruit.

An intense, low-sugar snack, with no added sugar

With 35 g of sugars per 100 g, freeze-dried strawberry is one of the lowest in sugar in our range - only the fruit's own sugars, with no added sugar or flavouring. It is still a fruit concentrate, so indulgent, to be savoured as a treat.

Does freeze-dried strawberry contain added sugar?

No. Our freeze-dried strawberries are made up of 100% strawberry, with no added sugar or artificial flavouring. The 35 g of sugars per 100 g are solely the sugars naturally present in the fruit, concentrated by the removal of the water. It is in fact one of the lowest-sugar fruits in our freeze-dried range.

Why is the taste of freeze-dried strawberry so intense?

Because fresh strawberry is almost 90% water. By removing this water cold, by sublimation, freeze-drying strongly concentrates the fragrance, colour and flavour into a small crunchy piece. The result: a small quantity is enough to get all the taste of the strawberry.

How do you eat freeze-dried strawberry?

You can crunch it as it is as a snack, sprinkle it over a muesli, a granola, a plant-based yoghurt or a fruit salad, add it to a smoothie, or grind it into a powder to naturally flavour and colour an icing or a dessert. It also goes very well with a water kefir or a homemade kombucha.

Is freeze-dried strawberry organic?

Our supplier is not certified organic, but the farming is, and the fruits are certified "pesticide residue-free". We have chosen transparency: strawberries picked at maturity, from a quality terroir, and a partner committed to international standards (ISO 22000, HACCP, IFS).

How do you store a pouch of freeze-dried strawberry?

Store the pouch at room temperature, away from light and heat. The 200 g format is resealable: remember to close it properly after opening to preserve the crunch, as freeze-dried fruit very easily takes up moisture from the air.
