Most juice recipes aim for total clarity and strain out every trace of pulp. This one goes the other way and keeps some body in the glass, for a drink that's thicker and more textured than a fully strained juice. Strawberries and raspberries supply almost all the color and sweetness, while a cup of dandelion greens cuts through with an earthy bitterness that keeps the juice from turning into plain red berry syrup. A small chili pepper is entirely optional, but running it through the juicer with the fruit adds real warmth, not just a background note: start with less than you think you want. Liquid stevia goes in at the end rather than the beginning, a few drops at a time, so you can taste as you go and stop once the sweetness suits you instead of guessing in advance. A slow masticating juicer gives the best results on leafy greens like dandelion, without losing too much volume, and the quantity makes about one 25 cl (8 oz) glass, small enough to drink fresh in one sitting rather than store. Pour it over crushed ice for something close to a granita on warm days, or drink it as is at room temperature.

Ingredients
- 2 cups strawberries
- 1 cup dandelion greens (more to taste)
- 1 cup raspberries
- 1 small chili pepper, seeded and deribbed (optional, to taste)
- 10 to 20 drops of alcohol-free liquid stevia (optional)
Directions
- Run the strawberries, dandelion greens, raspberries and chili pepper, if using, through a slow masticating juicer.
- Taste the juice and stir in the liquid stevia a few drops at a time if the fruit isn't sweet enough.
- You'll get about one 25 cl (8 oz) glass.
- Serve as is, or over crushed ice for a very refreshing drink.
Tip
The bitterness of dandelion greens varies a lot depending on how mature they are: young, small leaves give a milder juice, while large ones can take over the whole drink. If the bitterness feels too strong after the first sip, balance it out with a handful of extra strawberries rather than more stevia, which sweetens without softening the green flavor.

What are the pros and cons of a juicer?
On the plus side: a slow screw that cold-presses, better yield from leafy greens and fibrous roots, juice that keeps longer in the fridge, and quiet operation. On the downside: a higher purchase price, slower preparation, and more parts to clean after each use.
What effect does dandelion have on the liver?
Dandelion is traditionally associated with healthy liver function: it stimulates bile production and helps it flow, which supports the body's elimination of toxins. This reputation as a detoxifying plant is why it's traditionally used in spring cleanses, though it doesn't replace medical advice for liver issues.
Who should not take dandelion?
Dandelion is an edible wild plant, but it isn't suitable for everyone: people allergic to Asteraceae, those on medication, and pregnant or breastfeeding women should get medical advice before consuming it regularly. Never harvest it by the roadside or on treated land.
