These little bites reproduce the soft, sweet texture of cookie dough, with no baking and no eggs, thanks to homemade dehydrated banana slices. The walnuts, soaked then dehydrated, bring crunch and better digestibility, while a touch of cinnamon and nutmeg warms the whole thing up. Once the dough comes together, you simply shape it into small flat cookies or into balls, as you prefer. A simple treat that mostly asks for a little planning ahead for the dehydrating.

Ingredients

  • 240 g walnuts, soaked and dehydrated
  • 1 pinch of Himalayan salt (or the equivalent of 1 tablespoon - 15 ml - of seawater)
  • 1 pinch of cinnamon
  • 1 pinch of nutmeg
  • 135 g homemade dehydrated banana slices, packed
  • 1 tablespoon honey

Method

  1. Put the walnuts, salt, cinnamon and nutmeg in a food processor fitted with the S blade and blend to a coarse meal.
  2. Add the dehydrated banana slices and blend until they are fully incorporated.
  3. Add the honey and keep blending until you reach a dough-like consistency.
  4. Shape into small flat cookies or into balls, as you prefer.

Tip

For better digestion, soak the walnuts for 6 to 8 hours, rinse them, then dehydrate at 57 °C for 45 minutes before dropping to 40 °C until completely dry (12 to 24 hours); for the banana slices, allow 18 to 24 hours of dehydrating. If the dough stays crumbly, add one more dried banana slice rather than liquid, which would make it sticky. The bites keep for a week in the fridge in an airtight box.
