- 2 very ripe organic avocados
- 8 pitted medjool dates
- 25 g raw cacao powder
- 3 tablespoons homemade almond milk
- 2 tablespoons coconut oil
- 1 pinch of salt (or the equivalent of 1 tablespoon - 15 ml - of seawater)

Method
- Blend all the ingredients in the blender until you have a smooth, creamy texture.
- Transfer to an airtight container and place in the freezer for 1 to 2 hours, until the mixture is firm enough to shape.
- Form balls with a small ice cream scoop and quickly smooth them between your palms.
- Roll each truffle in the cacao powder so it is well coated.
- Return to the freezer for 30 to 60 minutes before serving. Keep them in the freezer: they soften quickly at room temperature.
Tip
You can replace the almond milk with coconut milk for a rounder flavour, and adjust the quantity according to the texture of your avocados: if they are very creamy, start with 2 tablespoons. Choose them very ripe but without brown spots, otherwise their taste will come through. To vary the coating, roll some of the truffles in desiccated coconut or chopped hazelnuts.
