Raw hemp butter and raw cacao fudge

This fudge comes together in a few minutes, with no oven or special equipment, and fully lives up to its indulgent promise. Hemp seed butter gives it a melting texture and a light hazelnut flavour, while raw cacao balances everything with its frank bitterness. One square straight from the fridge, and you have a dense, satisfying treat to calm a sweet craving.

Ingredients

  • 180 g coconut butter, melted (not coconut oil)
  • 250 g raw hemp seed butter
  • 60 ml filtered water
  • 1 teaspoon vanilla
  • 3 tablespoons honey
  • 1 pinch of sea salt (or the equivalent of 1 tablespoon - 15 ml - of seawater)
  • 25 g raw cacao powder
  • hulled hemp seeds, for sprinkling

Method

  1. Blend the coconut butter, hemp butter, water, vanilla, honey, salt and cacao in the food processor until you have a very smooth paste.
  2. Spread it on a tray lined with baking paper into a square about 2 cm thick.
  3. Sprinkle with hemp seeds, pressing them in lightly.
  4. Place in the freezer for about 1 hour, until the fudge is nice and firm.
  5. Cut into 12 squares and keep them in the fridge.

Tip

Coconut butter (the whole ground flesh) is nothing like coconut oil: the fudge depends on it entirely to hold its shape. If it has solidified, melt it in a lukewarm water bath while stirring, without heating it, before blending.

How do you make homemade fudge?

Traditional fudge is cooked from sugar, butter and milk until it crystallises. This raw version needs no cooking at all: blend melted coconut butter, hemp butter, filtered water, honey, vanilla, salt and raw cacao until you have a smooth paste. Spread it out about 2 cm thick, sprinkle with hemp seeds, place in the freezer for an hour, then cut into squares and keep in the fridge.

What does fudge taste like?

Classic fudge is very sweet, with a buttery caramel flavour and a melting, slightly grainy texture. This raw cacao version is much less sweet: the bitterness of the cacao comes first, lifted by the hazelnut note of the hemp and the roundness of the coconut butter. Its texture stays dense and melting, especially when served well chilled.

Is there another word for fudge?

Fudge is a British and American confection with no exact equivalent in many languages. In French it is often compared to a soft caramel or, in Quebec, to sucre à la crème. By extension, the name fudge is also given to dense, melting chocolate squares, like this raw hemp butter version.

How do you eat hulled hemp seeds?

They are eaten just as they are, with no soaking or cooking, and have a mild taste reminiscent of hazelnuts and pine nuts. Sprinkle them over a salad, a smoothie, a plant-based yoghurt or a dessert, as on this fudge. Finely blended, they make the hemp butter used in the recipe. Store them in a closed jar, somewhere cool and away from light.
