Who said a milkshake had to be a guilty pleasure? This one is made with homemade hemp milk, a frozen banana and a touch of raw cacao, for a treat that is entirely plant-based. A hint of peppermint and vanilla gives it an unexpected freshness. Served well chilled with a few ice cubes, it is enjoyed as a dessert in its own right.

Tip
Missing an ingredient? Do not give up: work with what you have to hand, the spirit of the milkshake stays the same. Add the peppermint drop by drop, as its aroma intensifies within seconds and can quickly overpower the chocolate.
For ice cream that works every time: with the Ninja CREAMi Deluxe ice cream maker, there is no more stirring every hour and no more watching the freezer. You freeze the mixture in its tub, you pick the programme (ice cream, sorbet, gelato or slushi), and a few minutes later the machine hands you a smooth, creamy texture with no ice crystals. It is the machine we adopted this summer for our plant-based ice creams.

FAQ: your questions about the raw mint chocolate milkshake
How do you make a milkshake thick?
Rely on cold and frozen fruit rather than shop-bought ice cream: a frozen banana on its own gives a thick, creamy texture. Also reduce the amount of milk, starting with 500 ml and adding more if needed. A few ice cubes blended in at the end thicken it even further.
What is the difference between a smoothie and a milkshake?
A milkshake is traditionally a dairy drink made with milk and ice cream, while a smoothie is a blend of fruit, sometimes thinned with juice or yoghurt. Plant-based versions blur the line: this milkshake keeps the creamy dessert side, but its texture comes from frozen banana, as in a smoothie.
How much milk do you use for a milkshake?
Allow about 250 ml of milk per person for a drinkable texture, a little less for a really thick milkshake to sip through a straw. With a frozen banana, 500 ml of milk is enough for two glasses. Add the rest gradually, tasting as you go, until you reach the consistency you want.
How do you use mint with chocolate?
Mint pairs with chocolate as fresh leaves infused in the milk, or as peppermint extract, which is far more concentrated. With the extract, a few drops are enough for a large glass. Fresh leaves, blended straight in, give a gentler flavour and a pretty green colour.
