Creamy berry bites on a cacao and cherry base

These bites layer a crunchy base of cacao and dried cherry with a smooth blueberry and banana cream. The macadamia butter brings the melting texture, the raw honey balances the tartness of the berries. They freeze very well, which makes them a handy reserve of snacks. Take them out a few minutes before serving to bring back all their creaminess.

Ingredients

Cacao and cherry base

  • 120 g coconut flakes
  • 65 g Brazil nuts
  • 2 tablespoons coconut blossom sugar
  • 2 tablespoons raw honey
  • 105 g dried cherries
  • 55 g cacao paste or cacao beans
  • 1 pinch of sea salt (or the equivalent of 1 tablespoon - 15 ml - of seawater)
  • 1 teaspoon powdered vanilla

Berry and banana cream

  • 75 g fresh or frozen blueberries
  • 1 very ripe banana
  • 60 ml coconut oil
  • 125 g macadamia butter
  • 2 tablespoons raw honey
  • 1 pinch of sea salt
  • 1 teaspoon powdered vanilla
  • 120 ml pure water

Method

  1. Pulse the coconut and the Brazil nuts in a food processor until coarsely chopped.
  2. Add all the other base ingredients except the cacao paste, then blend until sticky and even.
  3. Add the cacao paste and pulse briefly to work it in, without over-blending.
  4. Press the mixture into a glass dish or a shallow tin lined with baking paper.
  5. Blend all the cream ingredients in the processor or blender until creamy, then pour over the base.
  6. Chill or freeze for at least 2 hours before cutting into small bites.

Tip

These bites keep for several weeks in the freezer: make a large tray and cut it before freezing, otherwise the blade slides on the hardened cream. A knife run under hot water and wiped dry gives clean edges.

How do you use frozen blueberries?

In a raw cream like this one, use them straight from the freezer: they cool the mixture and thicken it at once, which works in your favour. Just avoid rinsing them in lukewarm water, which softens them and releases their juice. For a compote or a coulis, on the other hand, let them thaw and keep that juice.

How do you thaw frozen blueberries?

The simplest way is to leave them overnight in the fridge in a closed container, keeping the juice they release. At room temperature they thaw in about thirty minutes but collapse more. The microwave turns them into compote, which only matters if you meant to serve them whole.

How do you make a quick blueberry dessert?

75 g of frozen blueberries with a very ripe banana and two tablespoons of nut butter: in one minute you have an ice cream to eat with a spoon. With a few coconut flakes and a drizzle of honey on top, the dessert is ready before the rest of the table has finished clearing.
