Blueberry and hemp smoothie with spinach

Blueberry and hemp smoothie with spinach

This deep purple smoothie, quite delicious, hides a small secret: a generous helping of spinach, completely camouflaged by the blueberries. A good way to slip greens into the glass of the most reluctant, children included, without anyone noticing.

Ingredients

  • 1 banana
  • 1 cup frozen blueberries
  • 2 tablespoons hemp seeds
  • 1 to 2 cups water or plant milk
  • 2 to 3 cups organic spinach
  • 1/8 teaspoon stevia (or a few dates)

Method

  1. Put the liquid in the blender first, then the spinach, the banana, the hemp seeds and finally the frozen blueberries: this order stops the blades turning in the air.
  2. Blend until perfectly smooth, about a minute.
  3. Serve immediately, while the smoothie is still icy.

Tip

Swap the stevia for 2 or 3 pitted dates for a softer, naturally sweet version. If your blender struggles with the frozen blueberries, leave them at room temperature for five minutes before blending, or add a little more liquid as you go.

FAQ: your questions about the blueberry and hemp smoothie

How do you thicken a smoothie without banana?

Several options work well: a tablespoon of chia seeds left for ten minutes, avocado for a velvety texture, a few soaked cashews, or simply more frozen fruit and less liquid. The hemp seeds in this recipe also thicken things slightly while adding some fat.

What recipes use hulled hemp seeds?

They are almost always used raw, with no preparation. Scatter them over a salad, a porridge or a cold soup, blend them into a smoothie as here, or blend them with water for a plant milk in two minutes, with no soaking and no straining. They also work in pestos and energy balls.

How do you hide the taste of spinach in a smoothie?

The secret lies in two things: a fruit with a dominant flavour and a dark colour. Red fruits, and blueberries in particular, cover the green completely, both on the palate and to the eye. Add a banana for sweetness and serve it very cold. Start with a handful of spinach and increase gradually, nobody will notice.
