Warm cacao milk with almonds and dates

This cacao milk recalls chocolate truffles in a liquid, comforting form, perfect for a reading break or after a yoga session. The almonds and dates soaked overnight give a naturally creamy and sweet base, with no added sugar at all. A hint of ginger and vanilla scents the whole thing delicately.

Ingredients

  • 280 g soaked almonds
  • 150 g pitted dates, soaked
  • 960 ml water
  • 1/2 teaspoon powdered vanilla
  • a little fresh ginger
  • 2 to 3 teaspoons raw cacao powder

Method

  1. Soak the almonds and the dates separately overnight.
  2. Rinse the almonds thoroughly in cold water, then put them into the blender.
  3. Add the water and blend until no piece remains.
  4. Strain through a nut milk bag or a fine cloth, pressing well to extract all the liquid.
  5. Peel the soaked dates, keep their soaking water, then blend them with that water until properly creamy.
  6. Return this date milk to the blender with the almond milk, add the ginger, the vanilla and the cacao.
  7. Blend again for one minute.
  8. Keep in the fridge, and drink at room temperature or gently warmed.

Tip

Do not throw away the dates' soaking water, naturally sweet like caramel: it is what gives the milk its roundness. The almonds' soaking water, on the other hand, always goes down the sink. To warm the milk, stay below 42 °C, in a pan over very low heat or in a bain-marie: beyond that it separates and the texture turns grainy.

How do you make hot almond milk?

Heat it gently, in a pan over very low heat, stirring constantly. A homemade, non-homogenised milk separates as soon as it comes near boiling. If you want to stay raw, a lukewarm bain-marie or a spell in the dehydrator at 40 °C is enough to bring it to a pleasant temperature without breaking anything.

A powerful blender and a nut milk bag are plenty, and that pair is the most versatile: you choose your base and your density. Plant milk machines heat the mixture, which rules out the raw version. A juice extractor works too, with the advantage of separating the pulp without manual straining.
