This plant milk marries the softness of almonds with the buttery roundness of pecans, for a creamy and fragrant drink. The dates and the cinnamon give it a lightly caramel note that stands on its own. The recipe makes a large quantity, useful for the whole week. A basic worth mastering once so you never buy an industrial plant drink again.

Ingredients

  • 280 g activated almonds (see tip)
  • 220 g activated pecans
  • 2,9 l pure water
  • 8 dates
  • 1 teaspoon cinnamon
  • 1 pinch of Himalayan salt (or the equivalent of 1 tablespoon - 15 ml - of seawater)

Method

  1. Put all the ingredients into a powerful blender and blend until completely smooth.
  2. Strain through a nut milk bag, pressing firmly to extract all the liquid.
  3. As the quantity is generous, work in two batches, or divide the amounts to suit your needs.

Tip

Activating nuts simply means soaking them overnight in twice their volume of water, then rinsing them carefully before use: they are easier to blend afterwards and the milk is softer. Do not throw away the pulp left in the bag: dried in the dehydrator, it makes an excellent flour for raw tart bases.

How do you make your own almond milk?

140 g of almonds over960 ml of water for a good minute. Strain through a nut milk bag, pressing well. That is all: no additive, no thickener. Add a date or two to the blender if you want it lightly sweetened.

How do you make your own plant milk?

The principle is always the same, whatever the base: one volume of soaked nuts or seeds to four volumes of water, a powerful blend, a straining. Almonds and pecans give a rich milk, tiger nut a softer one, sunflower seeds an economical one. Only the soaking time changes, from a night for almonds to a few hours for seeds.

Can you replace milk with plant milk?

In raw preparations the swap is direct, volume for volume. In baking, bear in mind that a homemade plant milk is less fatty and less rich in protein than an animal milk: custards set less well. An almond and pecan milk like this one, richer than most, copes better than shop-bought versions, which are often very dilute.

What recipes are there for homemade almond milk?
