Why eat freeze-dried fruits?

Optimal nutrient preservation : The freeze-drying process is the only method that allows for the preservation of almost all heat-sensitive nutrients. Do freeze-dried fruits contain vitamins?
The lyophilization process involves rapidly freezing the fruits at very low temperatures, followed by dehydrating them under vacuum by removing water through sublimation (directly transitioning from a solid to a gas state without passing through the liquid state). No heat is involved, allowing the fruits to retain the vast majority of their vitamins and nutrients during the freeze-drying process.
Freeze-dried fruits are generally a good source of vitamins, especially vitamin C and certain B-group vitamins.
