In partnership with the company BRETALG, we offer you kombu in whole leaves dehydrated at low temperature (40°C) and presented in a resealable package that keeps your algae away from light. You can easily use it in your salads and various preparations.
🌿 Kombu can also be used to make a broth. Simply bring water with pieces of fresh or rehydrated kombu, herbs, and vegetables to a boil. Let it steep for 5 to 10 minutes with the heat off, then remove the kombu strips. This broth can be consumed plain with vegetables, it perfectly complements soups, or it can replace the cooking water for grains or legumes.
Kombu is the base ingredient of a traditional Japanese broth called "dashi." This algae alkalizes dishes in general. Used in the preparation of tomato sauce, it neutralizes the acidity.
The largest kombu leaves can be used to wrap other ingredients and be presented as papillotes or pouches. Kombu broths and infusions promote the detoxification of the body and the harmonization of weight.

For its countless properties, kombu seaweed has been sought after since ancient times, particularly for its richness in iodine. Kombu contains 20 to 30% minerals, which is 8 times more calcium than milk, 5 times more iron than spinach, and is also very rich in potassium and sodium. It contains vitamins A, B1, B2, niacin, B6, B12, C, E, F, K, PP. It also contains nearly 10% protein and 60% carbohydrates: guaranteed energy !
This seaweed is also known for its heavy metal chelating properties. Kombu has an interesting property of speeding up the cooking of grains and legumes, also making them more digestible. It contains sodium glutamate, which is a natural flavor enhancer.
