In spring, the body asks to cleanse itself. This barley grass, lemon, and ginger smoothie is one of my favorite drinks to start the day: three minutes of preparation, a glass of deep green, and a boost that combines the chlorophyll of young barley shoots, the vitamin C of lemon, and the gingerols of fresh ginger. A detox-immunity trio that I have been preparing for over twenty years.

Why this smoothie is a detox and immunity ally

The lemon-ginger duo, a recognized digestive tonic

Lemon provides vitamin C (about 53 mg per 100 g according to the Ciqual table of the ANSES) and triggers a paradoxical alkalizing effect: acidic in the mouth, it leaves basic mineral residues in the body. Fresh ginger is rich in gingerols and shogaols, compounds whose anti-inflammatory and digestive action is well documented. Consumed together on an empty stomach, they gently stimulate the gallbladder and prepare the digestive tract to receive the rest of breakfast.

Ingredients for 1 large glass (500 ml)

  • 1 very ripe banana or 1 juicy pear
  • 1 handful of kale or fresh spinach leaves (about 30 g)
  • 1 level teaspoon of barley grass powder (or 1/2 teaspoon of dehydrated barley grass juice, more concentrated)
  • The juice of 1/2 untreated organic lemon
  • 1 cm of fresh ginger peeled (about 3 g)
  • 1 teaspoon of chia seeds
  • 200 ml of filtered spring water or unsweetened plant-based milk (tiger nut, almond)
  • Optional: 2 or 3 ice cubes for freshness

Preparation in 3 minutes

  1. Peel the ginger and cut it into small pieces.
  2. Squeeze the half lemon.
  3. Pour all the ingredients into the blender bowl, adding the barley grass powder last to prevent it from sticking to the sides.
  4. Blend for 45 seconds at full power until you get a smooth and frothy texture.
  5. Serve immediately to enjoy the live enzymes.

When I want a creamier version, I add half an avocado instead of the banana and finish with a drizzle of unrefined maple syrup.
