Frozen chocolate and pecan squares, four ingredients

Four ingredients are all it takes for these little frozen chocolate squares, with a texture close to fudge and a deeply cacao flavour. The pecan brings crunch and a lightly toasted note that marries beautifully with the cacao. Kept directly in the freezer, they are eaten frozen, for a particularly indulgent cool break.

Ingredients

  • 45 g raw cacao powder
  • 120 ml coconut oil
  • 55 g raw pecan nuts
  • 2 tablespoons honey, or coconut nectar for a more neutral version

Method

  1. Put all the ingredients into a food processor and blend until smooth, close to a pudding.
  2. Pour the mixture into a small loaf tin lined with baking paper.
  3. Freeze for about 30 minutes, until the mixture hardens.
  4. Cut into small squares and keep them in the freezer.

Tip

Honey gives a rounder taste with a floral hint, coconut nectar a more caramel note and slightly less sweetness. In both cases, take the coconut oil out in advance: if it is too cold, it seizes on contact with the cacao and the mixture turns grainy instead of smooth.

Can you put chocolate in the freezer?

Yes, and it is even how this recipe is kept, since its coconut oil melts at 24 °C. With an ordinary chocolate bar, on the other hand, the freezer causes a white bloom on the surface when it returns to room temperature: the taste does not change, the look does. Wrap it airtight and let it come back slowly in the fridge.

How do you keep homemade chocolates?

It all depends on the fat. A preparation with coconut oil like this one belongs in the freezer or, at a pinch, the fridge. A chocolate made with cocoa butter keeps in a cool, dry place, between 15 and 18 °C, away from light and from strong smells, which cacao picks up very easily.

How long does artisan chocolate keep?

With no fresh ingredient, an artisan chocolate keeps for several months. As soon as a ganache, a fruit purée or a nut comes into play, you drop to a few days in the fridge. These squares, which contain pecans, easily hold a month in the freezer without the taste shifting.
