Nadia's three juices: green, pink and white from the slow juicer

Three complementary juices to ring the changes over the week: a bold, herbaceous green one, a slightly earthy pink one, and a very mellow one made with summer fruit. Each combines a run through the slow juicer with a quick whizz in the blender, which brings in the leaves and the flesh without losing any smoothness. With very few ingredients, you have all you need to give your daily refreshing break a new twist.

Ingredients

The Green Monster

The Pink Beauty

  • 1 large apple
  • 1 large raw beetroot
  • 1 carrot
  • 30 g mesclun or baby leaves

The Snow White

  • 1 peach
  • 1 slice of melon
  • 120 ml water

Method

The Green Monster

  1. Put the apple and the peeled half lime through the slow juicer.
  2. Wash the greens carefully: remove the spinach stems, peel the cucumber and take off the thick parsley stalks.
  3. Pour the juice, the water and the greens into the blender, then blend until very smooth.

The Pink Beauty

  1. Put the apple, the beetroot and the carrot through the slow juicer.
  2. Wash the mesclun and remove the stems.
  3. Blend the baby leaves with the juice in the blender.

The Snow White

  1. Put the peach through the slow juicer if it is firm, or blend it straight in the blender if it is nice and ripe.
  2. Peel the melon and remove the seeds.
  3. Blend the juice, the water and the melon in the blender.

Tip

To save time, make all three juices at the start of the week: pour them into airtight bottles filled right to the brim, to limit contact with the air, and keep them for 2 to 3 days in the fridge. Shake them before serving, as the blended pulp tends to settle. A nicely tart apple balances the earthy note of the beetroot beautifully.

Which is better, a centrifugal juicer or a slow juicer?

The two appliances do not work in the same way. A centrifugal juicer grates the fruit and spins the pulp out at high speed: it is fast, but the juice froths more and oxidises more quickly. A slow juicer presses food gently with a screw: it takes a little more time, but it extracts leafy greens well and gives a juice that oxidises more slowly. For recipes like these, where apple, beetroot and carrot are pressed, it is the appliance we prefer.

Which fruit goes with beetroot?

Apple is the most classic partner: its tangy sweetness balances the earthy note of beetroot, as in the Pink Beauty, which also adds a carrot. Citrus fruit, red berries and pear go very well with it too. As for aromatics, a small piece of fresh ginger lifts the whole thing nicely. For a first try, allow one large apple per beetroot, then adjust to your taste.

Which fruit goes with melon?

Melon naturally pairs with soft-fleshed summer fruit: peach, apricot, nectarine, raspberry or watermelon. In the Snow White, a peach put through the slow juicer is blended with a slice of melon and 120 ml of water, for a mellow, thirst-quenching juice. A few mint leaves or a squeeze of lime add an extra touch of freshness. Choose a melon that feels heavy and smells fragrant, a sign that it is nicely ripe.
