Why make a homemade juice with a juicer
A pasteurized industrial juice and a freshly pressed juice from an extractor have little in common, despite appearances. Conversely, a juice from the extractor (or slow juicer) is prepared cold, by slowly pressing fruits and vegetables.
In the philosophy of the living food, a fresh juice is drunk right after preparation. The extractor separates the juice from the pulp by pressing slowly, which gives a dense, low-foam juice, to be drunk within the hour.

The 3 key ingredients of this recipe
Raw beetroot
Raw beetroot gives the juice its purple color and earthy sweetness.
Fresh Klamath algae
The algae Klamath (Aphanizomenon flos-aquae, or AFA, is a freshwater cyanobacterium harvested exclusively from Klamath Lake in Oregon, a unique ecosystem in the world, nourished by the surrounding volcanic ash. It contains in particular:
- C-phycocyanin, the blue pigment that gives the algae its color.
It is offered in fresh form, kept at -18 °C. It is added to the glass, never in the extractor.
Fresh cistus pollen: a Mediterranean hive product
The cistus pollen is harvested in early spring by bees from the flowers of the Cistus ladanifer, Mediterranean shrub. Fresh pollen is stored frozen.

When and how to drink this juice
The timing of consumption matters almost as much as the recipe itself. Two time slots work well:
- In the morning, 15 to 20 minutes before breakfast.
- Around 4 p.m., as a replacement for coffee or a sweet snack.
Drink it slowly, holding the juice in your mouth for a few moments. As for frequency, aim for 3 to 5 glasses per week.
Precautions for use: Individuals on oral anticoagulants should remain cautious with beetroot and ginger; those allergic to bee products should avoid pollen; Klamath, like any superfood, should be avoided during pregnancy or breastfeeding without medical advice. In case of diabetes, adjust the quantities of apple and beetroot. Do not exceed one 250 ml glass per day during the initiation phase.
Variants and tips for raw food diet
This recipe is a base to be adapted according to the season, your needs, and your desires:
- Winter version: Replace the red pepper (not very local in winter) with a stalk of celery and add a thin slice of fresh turmeric.
- Variant: Incorporate a teaspoon of spirulina powder or maca for a richer flavor.
- Lemon tip: Squeeze half a lemon directly into the glass just before drinking. It pleasantly enhances the flavors.
- What to do with the pulp ? Do not throw it away: it can be reused in dehydrated raw crackers, in an Essene bread, or simply added to a soup.
FAQ: Your questions about this juice
Which ingredients should you combine in a juicer juice ?
A good juicer juice combines root vegetables (carrot, beetroot), fruit (apple), red bell pepper, fresh herbs (mint) and a touch of ginger. It is the balance between these ingredients, and not any single one of them, that makes the recipe a success.
How to make a homemade juice without a juicer ?
If you don't have a juicer, you can use a powerful blender and then strain the mixture through a nut milk bag or a fine cheesecloth. The result will be similar to juice, with a bit more fiber.
Can one drink raw beet juice every day ?
Yes, in reasonable quantities (100 to 150 ml of beet juice maximum per day for a healthy adult), raw beet is well tolerated. People prone to oxalate kidney stones, those on anticoagulants, or diabetics should seek medical advice before any regular consumption.
How long does a freshly pressed juice last ?
A freshly pressed juice from the extractor is ideally consumed within the hour. In the fridge, in an airtight jar filled to the brim to limit oxidation, it can be stored for a maximum of 24 hours.
What is the difference between fresh cistus pollen and dry pollen ?
Fresh cistus pollen is stored frozen and added to the glass just before drinking, whereas commercial dry pollen has been dried.
Can you add Klamath algae to the juice ?
Yes, it is added to the glass, after the juicer pass, as in the recipe. Pregnant or breastfeeding women should ask a healthcare professional for advice.
Is this juice suitable for children ?
From the age of 6, this juice can be offered to children in a milder version (reduce or eliminate the ginger and pollen, decrease the Klamath dose to 5 ml) and in smaller quantities (100-150 ml). Before the age of 6, it is better to stick to simpler juices without superfoods.
In practice: the opinion of Eric Viard, ISTOM
"This juice is an illustration of what I like to prepare with a juicer, with two products I find too often forgotten: fresh rockrose pollen and Klamath algae. In the 33 years that I have been vegan and experimenting with juices using an extractor, this is a recipe I make often, for its taste and because it showcases two products I love. In" Seaweed in everyday life, "We even dedicate an entire chapter to green juices incorporating fresh algae.", Eric Viard, founder of Biovie.
