Dehydrated Pumpkin Seed, Flax and Onion Crackers

These salty, firm crackers are designed for travel: make a batch before a road trip or a camping weekend, you won't regret it. A base of soaked flaxseed and date paste gives them a satisfying crunch once dried, while the pumpkin seeds add bite along with a good dose of omega-3, protein and zinc.

Ingredients

  • 150 g flaxseed
  • 250 ml water
  • 1 heaped tablespoon date paste
  • 600 g pumpkin seeds, coarsely crushed
  • 60 g chopped spring onion (or onion of your choice)
  • 2 tablespoons onion powder
  • ½ teaspoon black pepper
  • 1½ teaspoons salt

Method

  1. Mix the flaxseed with the water and let soak for about an hour, until the mixture becomes thick and gelatinous.
  2. Stir the date paste into the soaked flaxseed mixture and set aside.
  3. Coarsely crush the pumpkin seeds in a food processor — aim for a coarse chop, not a powder.
  4. In a large bowl, mix the crushed pumpkin seeds with the spring onion, onion powder, black pepper and salt. Make a well in the centre and pour in the flaxseed mixture.
  5. Mix everything by hand until you get a sticky, lumpy dough.
  6. Spread the mixture about ½ cm thick on a sheet of baking paper or a non-stick mat, using a fork or a small spatula lightly dampened to make spreading easier without affecting the final texture.
  7. Score the cutting lines for the crackers before drying.
  8. Oven method: set the oven to its lowest temperature, with the door propped ajar. Dry the crackers on their lined tray for about 2h30 to 3 hours, then flip them and continue drying for 30 to 60 minutes.
  9. Dehydrator method: follow the same timing at 48°C.

Tip

Leave the oven door slightly open throughout the drying time: this is what lets the moisture escape and allows the crackers to turn crisp rather than simply soften in the heat.
