Six-ingredient raw brownies with walnuts and Medjool dates

These very simple brownies call for only six ingredients and no baking, for a dense, chocolatey result that has nothing to envy the classic version. The walnuts bring the substance, the Medjool dates alone provide the melting texture and the sweetness. A quick turn in the food processor is enough, followed by an hour of rest in the fridge. The kind of standby recipe worth keeping in mind.

Ingredients

  • 200 g50 g finely chopped and set aside
  • 300 g pitted Medjool dates
  • 90 g raw cacao powder
  • 1/2 mashed banana
  • 1 tablespoon coconut oil
  • 1/4 teaspoon sea salt

Method

  1. 150 g of walnuts to a fine texture, then add the dates and pulse until they are worked in.
  2. Add the cacao, the mashed banana, the coconut oil and the salt, then blend to a smooth dough.
  3. Fold in the chopped walnuts you set aside, using a spatula.
  4. Spread the mixture into a square tin lined with baking paper, or shape small squares directly on a plate.
  5. Decorate with goji berries, cacao powder or grated coconut, then chill for about an hour before serving.

Tip

These brownies keep for several days in an airtight box in the fridge. If your dates are a little dry, ten minutes soaking in lukewarm water is enough to bring back their softness: drain them well, otherwise the dough turns sticky and will no longer cut cleanly.

How do you know if dates are still good?

A date in good condition stays soft under the finger and smells of caramel. Sugar crystals on the surface are not a fault, just a sign of drying: they remain perfectly usable in a paste. A fermented smell, a sharp taste or downy traces, on the other hand, mark the end of the road.

How do you prepare fresh dates?

Pit them by splitting them lengthways with your thumb, it is quicker than with a knife. If they are firm, soak them for ten to twenty minutes in lukewarm water before blending, then drain them. Keep that naturally sweet soaking water: it is what rescues a dough that has gone too dry.

How long do dates keep?

At room temperature, in a closed jar away from the light, allow several months for semi-dry dates. In the fridge they easily last six months to a year, and they freeze very well without changing texture. Fresh dates, which hold more water, keep in the cold and are eaten within a few weeks.
