The Azuki red bean (Vigna angularis) is popular in Asia and particularly in Japan, where it is better known for being used in the composition of pastriesDorayaki for example) than in savory dishes. It is a legume appreciated in vegetarian and vegan diets because Azuki is very digestible, in addition to being rich in protein.

🌱 Once sprouted, its taste is similar to that of a white bean.

The Azuki red bean is a legume that is very rich in proteins and dietary fibers. The fibers help keep the digestive system active, which limits constipation. They are also believed to have a protective effect against colon cancer.
Its richness in fiber helps maintain stable blood sugar levels and is therefore recommended for people with diabetes.

It contains folates, potassium, and magnesium, all of which are essential for a healthy heart.

The presence of molybdenum is also noted, a trace element that produces sulfite oxidase, an enzyme essential for liver detoxification.

It contains small amounts of B vitamins (B1, B2, B3, B5, B6, and B9).

TheAzuki beans can contain up to 29 different types of natural antioxidants, including proanthocyanidins. Studies have demonstrated the beneficial effects of proanthocyanidins on oxidative damage associated with various diseases such as inflammation, cardiovascular diseases, atherosclerosis, diabetes, and cancer.
