Kombucha

Kombucha is prepared by fermenting sweetened tea with a living culture called a kombucha mother, or SCOBY (Symbiotic Culture Of Bacteria and Yeast). This culture, shaped like a gelatinous disc, settles on the surface of the liquid and gradually turns the sweetened tea into a sparkling, slightly tangy drink.

To start your own fermentation at home, you have two options: the organic kombucha mother alone, if you already have the rest of the equipment and simply want a healthy, active culture, or the complete organic kombucha pack, designed for beginners, which brings together the mother, the tea, the sugar and the instructions needed to start your first fermentation without buying anything else.

Once established, a kombucha mother regenerates with each fermentation cycle: it produces a new layer with every brew, which you can keep, give away or use to start a second jar. Well looked after, it can last for years.
