Roasting destroys essential nutrients
Conventional cocoa is roasted between 120°C and 180°C to develop its aromas. This process improves the taste but degrades a large part of the bioactive compounds. Comparative studies show that cocoa cooked at high temperature contains around 126% less iron, 149% less magnesium and 136% less potassium than raw cacao of equivalent value. Flavanols — responsible for the cardioprotective effects — largely disappear as soon as the bean goes above 150°C.

How much raw cacao per day?
The usual recommended dose is 5 to 10g of raw cacao powder per day (about 1 to 2 teaspoons), which provides around 70mg of magnesium and a decent dose of flavanols. What time of day should you consume raw cacao?

Raw cacao is a superfood, but like any food concentrated in active compounds, it calls for a few precautions.
- Stimulants: Raw cacao powder contains about 0.2% caffeine and 2-3% theobromine. In excess, this can cause nervousness, irritability or palpitations.
- Raw cacao and the liver: Cacao's alkaloids are metabolised by the liver. During a detox cure or in case of liver disease, moderate your consumption.
