Raw chocolate and walnut fudge brownies

Proof that very few ingredients are sometimes all it takes to create a seriously indulgent dessert: these raw brownies contain only four base ingredients. Walnuts, medjool dates and raw cacao are enough to build a fudgy, melting texture, with no oven and no added sugar. Quick to put together, this recipe is ideal for a last-minute chocolate craving.

Ingredients

  • 1 ⅓ cups walnuts
  • 8 to 9 medjool dates, pitted
  • ¼ cup raw cacao powder
  • 2 tablespoons water
  • Coconut flakes, to finish

Method

  1. Process the walnuts in a food processor until coarsely ground, stopping short of a paste.
  2. Add the pitted dates, the cacao and the water, then process until you have a sticky, even dough that gathers into a ball.
  3. Press the mixture firmly into a small tin lined with baking paper, to a thickness of about two centimetres.
  4. Scatter with coconut flakes, chill for about an hour, then cut into squares.

Tip

For an even fudgier texture, add a tablespoon of melted coconut butter to the dough before pressing it into the tin. And if your dates are dry, ten minutes soaking in warm water restores all their softness.

What is the difference between dates and medjool dates?

The medjool is a variety of date, not a separate category. It stands out for its size (often twice that of a Deglet Nour), its very fleshy body and its high moisture content, which gives it that almost sticky caramel texture. That is precisely what makes it ideal here: it binds the dough without any need for added fat or sweetener.

How many medjool dates can you eat per day?

Two to four dates make a common portion for an adult. They are fruits that are very dense in natural sugars, around 65 g per 100 g, but also rich in fibre, potassium and magnesium, which moderates the glycaemic impact compared with an isolated sugar. As always, the amount depends on the rest of your diet: better a regular pleasure than continuous snacking.

How do you make an easy date cake?

The simplest version is precisely this one, with no baking: a ground nut, soft dates to bind, a flavour (cacao, vanilla, spices) and a few drops of water. The processor does all the work. Press into a tin, let it set in the cold, cut. The only point to watch is the water: add it spoon by spoon, because a dough that is too wet will not hold when cut.

Why eat 3 dates in the evening?

The idea circulates widely, but no particular property is attached to the number three or to the time of day. What we do know is that dates provide readily available carbohydrates, magnesium and a little tryptophan, which explains why they are often associated with a comforting snack. Eat them when you feel like it, without looking for a protocol.
