Honestly, durian is THE fruit that leaves no one indifferent - the "king of fruits" in Asia, with its legendary smell and custard-like taste. When freeze-dried, its water is removed at low temperatures (the fresh fruit contains about 65% water) without ever heating it: what remains is the concentrated and creamy flesh., no added sugar. Concretely, it's our best-selling freeze-dried fruit - and an amazing snack for those who dare.

We are pleased to offer you this famous exotic fruit with a powerful smell, which you may have already encountered fresh in Asian stores, the Monthong durian from Southeast Asia (Durio zibethinus). The fruit comes from a tropical tree resembling our temperate chestnut trees, with a thick shell, actually a spiky shell, and it has the size and oblong shape of a rugby ball or the round shape of a soccer ball. It indeed resembles a sort of giant chestnut. But unlike chestnuts, it only grows in tropical regions because it cannot withstand temperatures below 18°C, which is understandable.

In our case, it is harvested at maturity in Vietnam and freeze-dried into small pieces in a resealable 200g pouch.

> This technique, which appeared in France at the beginning of the 20th century, dries food by sublimation: the product is first frozen, before proceeding to the evaporation of its water under vacuum.
