Did you know ? "Methi" is the Indian name for fenugreek! As a vegetable, herb or spice, it is essential in Indian cuisine as well as in Ayurvedic herbal medicine. Indeed, it is one of the seeds with the most complete properties: hypoglycemic, anti-inflammatory, anti-viral, galactogen, aphrodisiac, cardiovascular protector ... it still acts as an anabolic and improves the assimilation of proteins!
THE RECIPE
(For a plate)
1 large handful of sprouted fenugreek seeds
1/3 cucumber, finely cut into quarters
1 diced tomato (or cherry tomatoes cut in half)
1/2 chopped onion
1 small handful of raw cashews
coriander
The sauce:
2 tbsp olive oil
1 tbsp of marine plasma
1/2 teaspoon garam masala
1 dash of lemon juice
pepper
N.B. The salad will also be delicious with young fenugreek shoots! You can you add a bit of apple to balance the bitterness?
